The roast seared perfectly on high heat on the stove top and then went in the oven @ 450 for 15 minutes then 350 for another 25 or so. Turned out perfect. Especially considering the price I would highly recommend this pan for oven roasting any high grade cut of beef roast, pork loin, or a nice rack of lamb (my next "project"). Nice and heavy, looks gorgeous and cleans up well, although it barely fits in my sink... I guess that would be the only draw back in that it is huge.

Customer Review: Biggest bang for the buck Summary: 4 StarsI am guy who likes to cook and I am a little particular about how my food turns out (big self critic). I have tried many different types of pans from T-Fal to Racheal Ray's (which I like). Her set of pans do not have a large skillet available, therefore I was forced to shop for an additional larger skillet for those BIGGER meals. Now you know why I got it, lets get into how it worked.... GREAT BIG COOKING SPACE. Stainless is harder to cook with, everything sticks to it. Your forced to either really oil the pan, or add water or anything else to keep the pan lubed so the food doesn't stick or burn. This pan holds up well for all of this, it has an aluminum sealed pad on the bottom which works great for smaller burners to reach on the outside of the pan for even heating. I would not recommend using this pan if you need several pots/pans on the stove at once, this thing is huge and takes up more than a fair share of real estate. But I think if your looking to cook for a large crew, or just looking to cook a large meal for left overs your making a great choice with this pan. I gave it only four stars because it is a pain to clean, I have a big sink to and it is a monster to handle. But great cooking makes for big cleaning sacrifices... cook well & eat well.
Customer Review: Wears down easily over time. Summary: 3 StarsI've had this skillet for a little over a year. I have a gas stove, and I always cook on low to medium heats using a cooking spray like Pam, or olive oil. My roommate used it on high heat ONCE and it burned. Now the surface is not the same as it was when it was new, and pretty much everything sticks to it and burns, even on low heat with lots and lots of oil. So just be careful not to use high heat and you should be okay, but I think it was a little drastic for the pan to be totally ruined after one use of high heat.

It heats evenly and I am able to cook a large batch of food when I have company coming. It cleans up nicely and lovely in appearance as well. Highly recommend if you cook for a crowd and want top quality cookware at an amazing good price...
