I'm not the first person to crow about this kitchenware, I know. See, I've had this set for about a year and half, and have been enjoying it so much I've just forgotten to review it!
I grew up with cast iron, and there's a knack to getting those to cook just right . . . a knack I just never mastered, no matter how often grandma showed me the way of it. When I moved out on my own, I took a couple of smaller, well-seasoned iron skillets with me (which I still own), and then added to the collection with the non-stick stuff.
Frankly, non-stick is picky, and wears out. I've never been able to keep it usable for more than a few years at a time, even with the more expensive cookware. When I read that it might actually be harmful to my family and me, that sealed it: It was time to find another solution.
This Cuisinart Multiclad Pro set was just what I was looking for. It's smart-looking without being fru-fru. The pans are a little heavy (but not as heavy as cast iron), which makes it a little challenging to flip and sautee at first, but once you get used to it, those things aren't any problem at all. The heat is evenly distributed which means hot-spots are non-existent. I even noticed that it takes less time for water to boil for pasta than with the cheaper quality pots I used to have. This is probably due to the heat distribution.
One very nice thing about this set is that they are designed to heat evenly no matter what the temperature. I'm a big slow-food fan, so lower temps and longer cooking are very important to me. These pans do the job like no other. They're absolutely great!
Cleanup took a little time to get used to, but I soon found the knack of it. It's just a different process than that of either iron or non-stick. De-glazing is useful here, or a simple non-stick spray. It's a snap.
Great cook set, great value. I've added two other pieces to the original set, and I'm a happy pappy.
